In Penang, there are a type of noodle which comes in big pieces. It somestime can be bigger piece than a spreaded Chee Cheong Fun but taste like typical koey teow. In Hokkien, they call it “TUA PAN“. Before you cook it, you will need to cut it into smaller piece.
In KL people call this “WAT TAN HOR” [Smooth Egg Koey Teow], Ipoh people call it “SAR HOR FUN” [SAND KOEY TEOW??] and Penang people call it “CHAR HOR FUN” [Fried Koey Teow]. Basically it is cooked the same way just come with a different name according to where it is sold. Our of this 3 I still prefer the Penang Char Hor Fun more than the rest.
Penang island has a few reputable Char Hor Fun restaurant which have been selling since the pre war time. They are Foo Heong [Cintra Street], Tai Tong and Kafe Tong Hooi. There are a hidden gem situated near a small place a long the Penang Airport runway called Sungai Tiram where it is right next to the air strip. When you dine here, you can see a lot plane take off or landing.
The Char Hor Fun stall actually is located within a small food court where they got sell seafood noodles as well.
Stir fried TUA PAN with rice vermicelli with soya sauce. This is prepared in advance to shorten the cooking time. They don’t fry much and put a side. They just cook it in advance because of the orders are coming non stop. Each time the TUA PAN are stir fried, the frying pan need to be cleaned before they can cook the gravy and the ingredients.

Stir Fry Tua Pan in action. The TUA PAN must fried until got a bit overcooked or in Hokkien called “CHAU HUI TAR” a bit. Without that, it is not enough kick in the Char Hor Fun.
Then the cravy are cooked and poured on top of the stir fried. The gravy are cooked with special boiled soup, corn starch to thicken it, CHAI SIM (dunno how to call this vege in english), prawns, pig liver and egg. It look simple to prepare but the skill to prepare it is not easy.
The it must be accompanied with pickled green chili. Without this, it doesn’t feel right when eating your Char Hor Fun.
See the bottom part …. a bit of the over cooked TUA PAN coated with soya sauce ….. That is the best part. We did order another plate of EE Mee which cooked the same way. That time myself and Daniel busy gawking down the Char Hor Fun already …. forgot to take picture of the EE FU MEE. It is basically looks the same with different noodle only.

This coffee shop got inner and outer part. Inner part serve only coffee/tea. If you want juices, you need to sit at the outer area. For breakfast, PenangTuaPui mention their Hokkien mee are nice.

Remark:
The best you can get in Penang and they are very generous on the pork lard. The sambal is the best for eat with the KL Hokkien Char. The chili in KL is too salty and not spicy enough compared to this. The sambal have belacan mixed in it and that is what makes it taste so good.

Make sure you called up to make reservation or ask availability to avoid disappointment.
The food quality is good but poor in customer service. You have to wait like hell when you arrive there around 12.30 or 1pm. I usually arrive there before 12 and imagine such early time the roast pork is sold out. You can see the whole stack of roast pork there but is already reserved. The sour and spicy vege soup is a MUST to try.

A food court where a lot of stalls operated by Penang people. I personally test most of the stalls by speaking directly with them Penang Hokkien dialects when ordering or enquiry the food. When they reply me with Hokkien, I will directly order from them. So far there are none that dissapoint me here and end up become my favourite dinner location if can’t figure out what to eat.

Out of all char koey teow which I had in Penang, this is without a doubt the top of the line. With a reasonable price of RM8.20, you are getting 4 big prawns, mantis prawns, crocker and dug egg. This 5 ingredients is the most ideal seafood and eggs for frying a perfect plate of char koey teow. By looking at the picture already tells you that this is a fantastic food.

This is one of my prefered kopitiam in Penang. Under one roof there are so many top of the line dish which famous in Penang. The drinks here served are slightly different of what you all drink in the coffee shops so far. They cook their own sugar syrup and froze it. They put evaporated milk for their cold drinks.
My favourite dish in this coffee shop is the LOH DUCK KOAY CHAP. The duck wings are very tasty. Koay Chap is a dish where it use tapioca flour for the mee and come with a squarish shape and then eat together with the loh duck.
The Chee Cheong Fun here are served with chili paste and shrimp paste. Typical Penang style of eating Chee Cheong Fun. The Char Koay Kak also is very tasty but you have to wait for the que if you going to take away.
